I never use a mix.
I prefer fresh ingredients. Most of the fruit we use, we pick. The eggs our from our own chickens. The milk we use is raw local milk. When I can I use my wife’s freshly ground flour.
All batters are basically the same base: Flour, eggs, milk, salt, baking powder, coconut oil, and baking soda. The amount or absence of each depends on the desired result. Since there are 6 members of our family usually at the table, I use the following for almost every batch:
3 cups flour (I like to substitute other flours depending on the pancake)
3 eggs (I tend to like the extra egg, but two works just fine)1/2 teaspoon of salt
1/2 tablespoon of baking soda
1/2 tablespoon of baking powder
1/8 cup coconut oil
2-3 cups of milk (I use all sorts of liquids in substitution for milk and generally mix to the desired consistency)
Just about anything can become a pancake. Be creative.
