Sometimes in life you have to indulge.
Its been a rough week. Lots of events, lots of projects and many unexpected demands have come and gone. Since Sunday is a “day of rest” I decided to indulge with a sweet combination.
Take the zest of 2 large oranges (and go ahead and juice them while you’re at it.
2 tablespoons of pure vanilla
2 tablespoons of lemon juice
1/4 teaspoon of nutmeg
1 cup honey dissolved in the orange juice mixture above
3 cups flour
1 1/2 cups of large dark chocolate chips
1 teaspoon of salt (Mmm salt and chocolate)
1 tablespoon of baking soda
1 tablespoon of baking powder
1-2 cups of milk (I use all sorts of liquids in substitution for milk and generally mix to the desired consistency)
Cook on cast iron to get those crispy edges and surfaces. Serve with pure New York Maple syrup.
This pancake satisfies on a deep level. Mmmmmm. Everything is going to be good.
