It seems every holiday I have to create something to reflect the day. Today I decided to create a patriotic themed pancake.

Start with the Basic Batter
Take 2 cups of blueberries and 1 1/2 cups of milk and blended until smooth. This is substituted for the normal milk mixture in the pancakes.
Add 1 cup chopped strawberries
Add 2 tablespoons of freshly ground ginger
Add 1 cup sugar

Stir until well blended and a smooth consistency.

Cube a package of cream cheese and fold into batter. Cook until golden and crispy around the edges. Serve. Mmmmm.

Our family’s favorite part is the little surprises of strawberry or cream cheese that poke through.
