Over the last several weeks I have been a bit silent on my postings about pancakes. I have been cycling through older recipes and enjoying old favorites. Then this past Sunday I really wanted something a bit different.
Let’s call these, “Western Pancakes” based on the concept of a western omelette.
Start with the basic batter. Mix all the dry ingredients together. Add 1/2 teaspoon of chili powder. Increase salt to a 1/4 teaspoon. Add 1 extra egg.
Take two medium to large potatoes and grate them on a grater. (I used purple potatoes)
Dice one onion
Dice one large green pepper
Mix all ingredients.
While cooking the pancakes. Grate some sharp cheddar into a separate bowl.
Preheat the over to 250. As you finish each pancake, sprinkle the cheddar over the top and place on a pan in the oven to melt.
Serve with pickled jalapeno and habanero slices, and maple syrup.
