One of my favorite things is breakfast for dinner. A good omelette with a little Tabasco and hot peppers with caramelized onions and I am happy.

Why not a savory pancake? Here’s two:

Western Pancakes

Start with the basic batter. Add 1/2 teaspoon of chipolte powder and 1/4 teaspoon of mustard powder.
In a separate pan, caramelize one finely diced red onion, one green bell pepper and cubed smoked ham.
Mix into batter.
Cook pancakes in cast iron skillet.
Serve with maple syrup.

Heart Attack Pancakes

Start with the basic batter. Add 4 tablespoons of vanilla, double the salt and add enough extra milk to “thin” the batter.
In a separate pan, brown 1lb of maple sausage and one finely diced red onion.
Mix sausage and onions into batter.
Cook pancakes until crisp on both sides.
Layer thinly sliced sharp cheddar cheese over the pancakes and place in a warm oven at 175.
Cook 6-10 eggs over-easy.
Layer the eggs on the cheese, and cover with another pancake. Serve with maple syrup.
